How do I love thee bacon? Let me count the ways. Yes, it is so good it makes me quote Shakespeare (badly, but still). Because it’s the weekend and brunch is my favorite meal in the world, I’ve rounded up my favorite bacon recipes. This includes its Italian cousin pancetta. The only difference between bacon and pancetta is how they are cured. Regular bacon is traditionally brined and smoked.
