The warm weather is here and I couldn’t be happier. I love all of the fresh flavors and gorgeous produce. It doesn’t stop me from baking though, my oven is busy year round. This week I wanted to make really light and gorgeous blondies for the Memorial Day weekend festivities. So I came up with an amazing recipe for strawberry lemon oat blondies that were really simple to make.
Once the tray cooled completely, I just cut them into 16 equal squares. Then they were ready for weekend fun! Oh my goodness, they were really fluffy and light with so much flavor from the strawberry jam and lemon juice. The oats gave them some really great texture. Hope you all enjoy them too!! xoxo
Amazing little strawberry lemon oat blondies are such a fresh and simple treat with all of their bright summer flavors! So perfect for a snack or dessert.
- 1 cup all-purpose flour
- 3/4 cup old fashioned oats
- 1 pinch salt
- 8 ounces white chocolate chips
- 3/4 cup strawberry jam
- 6 tablespoons butter
- 1 cup granulated sugar
- 4 whole eggs
- 1/2 cup fresh lemon juice from about 3 lemons

Pre-heat the oven to 350 and spray an 8 x 8 baking pan with cooking spray. Whisk the flour, oats and salt together in a bowl and set it aside. Then fill a small pot halfway with water and bring it to a gentle simmer on the stove. Combine the white chocolate, strawberry jam and butter in a heat proof bowl and place it above the simmering water to melt everything together, stirring often with a heat proof utensil. Once it is all melted and smooth, set it aside for a minute to let it cool a bit. Set up a stand mixer with the paddle attachment and combine the sugar and eggs in its bowl. Beat them together thoroughly until pale and airy.

Slowly pour in the melted white chocolate and strawberry mixture and let it completely get beaten in. Then pour the lemon juice in. Finally, turn the speed to low and slowly add in the dry ingredients until you have a smooth batter. Pour the batter evenly into the baking dish and bake it for 55-60 minutes, until golden brown on top and a toothpick comes out cleanly. Let them completely cool, then cut the blondies into 16 equal squares. Serve immediately and enjoy! They also keep well for a couple of days sealed up.
I can’t stop my cravings for strawberry. Loved this recipe. I will use a little bit more butter to make it further smooth.

This looks really good and something easy enough that i could actually do it! I honestly think I have all these ingrediants on hand, which is amazing for someone who doesnt really bake!

I tried and the water released made them too wet. However, folding in freeze dried strawberries could work!!
