Crock Pot Buffalo Chicken Dip

I’ve been really trying to be healthier since the new year and for the most part I’ve been doing well! Marc and I have nearly entirely cut out beef and pork and incorporated a lot more veggies and low carb meals. I think we can cheat though when it comes to the big game. Now I have been frank on this blog that I am not a football person. I’m not a sport person in general. However, I LOVE football food and a fun super bowl party with friends. So I decided to make a game day ready crock pot buffalo chicken dip with loads of spice. It was so simple and so fun to snack on!

To make it really simple, I just shredded a store bought rotisserie chicken to get about 3 cups worth of meat. There is nothing like the convenience of those lovely store bought chickens!
After that, and just quickly chopping up the ingredients that needed it, everything just went into my beloved crock pot and got a stir. I made sure to cut the cream cheese into cubes so that it would melt more quickly. The pepper jack gave this crock pot buffalo chicken dip a great extra kick.

After 2 hours on high, I had a gorgeous big game dip on my hands! The cheese was so melty and the whole thing was simply glorious. I dug in with some blue corn chips and was a happy girl. I can’t wait to make it again for the super bowl. What was so fantastic about making it in the crock pot was that I could keep it on the warm setting once it was done so that it stayed nice and melty. Hope you all love it too! xoxo

This is such a simple and wonderful crock pot buffalo chicken dip that will be sure to spice up any game day! I love them with blue corn chips.

Ingredients
  • 3 cups shredded rotisserie chicken
  • 1 cup Frank’s buffalo sauce
  • 10 slices pepper jack cheese diced small
  • 8 ounces cream cheese diced small
  • 4 whole scallions thinly sliced
  • 2 stalks celery diced small
  • 1 pinch salt
  • 1/2 teaspoon garlic powder
Instructions
  1. Combine all of the ingredients in a crock pot and give them a stir. Close it up and turn the heat to high. Let the dip cook for 2 hours to melt the cheeses and meld the flavors. Serve immediately with your favorite dippers like blue corn chips right from the crock pot set on warm!

  1. One of my goals for 2019 is to use my crock pot more! I bought it a few years ago and it hardly gets used. I’m adding this to the list of recipes to try.
