Curry Chicken Loaf

Winter is the time for comfort food, amiright? There’s nothing like it on a cold night. I am still trying to not eat beef though and cut back on the really decadent comfort foods. That’s where this lovely curry chicken loaf comes into play. It has so much flavor and a wonderful, tender texture but is still a lot leaner than the traditional comfort food classic. Best of all, it was so easy to put together!

The mixture for the curry chicken loaf was really simple. I used Greek yogurt to keep it from drying out, Dijon for a deeper flavor, and breadcrumbs and eggs to keep it held together. All of those ingredients really enhanced both the ground chicken and the curry powder I used. Onion and cilantro gave it some extra aromatic goodness too!
Once I formed that mixture into a loaf shape on my sheet tray, I slathered the top in a mixture of even more Greek yogurt, curry powder and some lemon zest to brighten everything up. That was all there was to forming this baby, it just had to bake!
When it came out of the oven, that topping had baked into the curry chicken loaf a little and kept it so tender and flavorful. It took about 50 minutes for it to cook to perfection. I let it rest for a couple of minutes before I sliced it.

Oh my goodness, it was everything I wanted in comfort food without all of the guilt. I love the combination of curry with chicken so much and this time was no different. With our favorite sides, it was a fantastic winter meal. Hope you all love it too! xoxo

This curry chicken loaf is so comforting and flavorful with its warm spices. It’s also lean and simple to make for a fantastic winter meal!

Ingredients
  • 2 pounds ground chicken
  • 6 1/2 teaspoons yellow curry powder divided
  • 1/2 cup breadcrumbs
  • 1 container plain Greek yogurt 5.3 ounces, divided
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh cilantro roughly chopped, plus additional for garnish
  • 1 whole onion finely diced
  • 1 pinch salt
  • 1 pinch black pepper
  • 1/2 teaspoon garlic powder
  • 2 whole eggs
  • 1/2 a lemon zested
Instructions
  1. Pre-heat the oven to 375 and line a sheet tray with foil. Then combine the chicken, 6 teaspoons of the curry powder, bread crumbs, 1 tablespoon of the Greek yogurt, Dijon mustard, cilantro, onion, salt, pepper, garlic powder and eggs in a large mixing bowl. Stir it all together until well combined. Turn it out onto the tray and form it into tight loaf. Then stir the remaining Greek yogurt, remaining 1/2 teaspoon of curry powder and the lemon zest together in another bowl and spread it over the top of the loaf. Bake the chicken loaf for about 50 minutes, until bubbly on top, slightly crisp on the outside and cooked through. Let it rest for a few minutes, then slice and enjoy with your favorite sides!
