Chocolate Peanut Butter Energy Bites

During a busy week, easy and energizing snacks are a life saver. If they are great to take on the go, so much the better! That’s why these chocolate peanut butter energy bites are absolutely perfect, and constantly available in our house. They’re so easy and take no time at all to prep, so that they’re ready for the week.

The ingredients for these babies are simple and you probably already have them all in your pantry! I just stirred them thoroughly so that the peanut butter and honey coated the other ingredients to hold it all together. Then it needed to chill in the refrigerator for at least 15 minutes to solidify.
Once the mixture chilled, I just used my small cookie scoop to get perfect amounts of it and mold it into little balls. That was all there was to it! These kept well for days in the fridge to just grab a snack when I had a mid-afternoon slump or even breakfast when I needed something really fast.

I really love having these on hand during the week. My husband even more so because chocolate and peanut butter is his absolute favorite combination in the world. Hope you love them too! xoxo

These are super simple and tasty chocolate peanut butter energy bites with lots of oats and honey! They're perfect for a quick pick me up in the afternoon or breakfast on the go.

Ingredients
  • 1 1/2 cups rolled oats
  • 1 cup peanut butter
  • 1/2 cup chocolate chips
  • 2 tablespoons honey
  • 1/2 teaspoon cocoa powder
  • 1/2 teaspoon cinnamon
Instructions
  1. Combine all of the ingredients in a large bowl. Stir it all together thoroughly so that the oats are well coated with honey and peanut butter to bind it all together. Let the mixture chill in the refrigerator for at least 15 minutes to make it easier to work with. Once it is chilled, use a small cookie scoop to get uniform amounts of the mixture and roll the scoops into balls. With the size I made mine, I got 20. Serve immediately! They keep well sealed in the refrigerator for days too.
