Banana Waffles with Banana Bourbon Sauce

It was another waffle weekend here in the Suznovich house! This time I made amazing banana waffles since the bananas we had were starting to get too ripe. I always end up making banana bread when that happens so I thought I would try something different! Oh my goodness was I happy that I did. The batter came together quickly.

I love how easy waffle batters are. There is no special equipment necessary! I whisked my dry ingredients together first in a big bowl. In another bowl, I whisked my wet ingredients together until smooth, which included one of the overripe bananas. The wet ingredients went into the dry ingredients and I whisked it all together. That was all there was to the batter for the banana waffles!

I took another very ripe banana and finely chopped it. That went into my pot with water, brown sugar and pumpkin pie spice. I let that mixture gently boil for 5 minutes, then I added the bourbon. The sauce kept on bubbling for another 10 minutes to become thick and almost syrupy. Then it was done! I turned the heat to the lowest and moved the pot slightly off the burner to just keep it warm.
While the batter rested, I made the amazing banana bourbon sauce. I took another very ripe banana and finely chopped it. That went into my pot with water, brown sugar and pumpkin pie spice. I let that mixture gently boil for 5 minutes, then I added the bourbon. The sauce kept on bubbling for another 10 minutes to become thick and almost syrupy. Then it was done! The banana waffles just needed to go for about 5 to 5 1/2 minutes to get gorgeously golden and puffy.
Once the batter finished resting, I broke out my beloved waffle iron to start cooking it. The banana waffles needed to cook in the iron for about 5 to 5 1/2 minutes to become gorgeously golden and puffy.

The batter yielded 4 banana waffles total. I served each one immediately with the warm sauce, banana slices and walnuts to top it off. Oh my goodness, it was glorious! It felt like dessert after our scrambled eggs but it wasn’t cloying. The banana and warm spices gave the waffles such amazing flavor. These babies quickly became a favorite on our waffle rotation for sure! Enjoy, friends. xo

Ingredients
FOR THE BANANA WAFFLES
  • 1 1/2 cups all-purpose flour
  • 1/2 cup dark brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups milk
  • 1 whole overripe banana peeled and mashed until smooth
  • 4 whole eggs
  • 1 teaspoon banana extract
FOR THE BANANA BOURBON SAUCE
  • 1 cup water
  • 1/2 cup dark brown sugar
  • 1 teaspoon pumpkin pie spice
  • 1 whole banana peeled and finely chopped
  • 1 tablespoon bourbon
  • chopped walnuts as needed for topping
  • additional sliced banana as needed for topping
Instructions
  1. First, prepare the batter. Whisk the flour, brown sugar, baking powder, cinnamon and salt together in a large mixing bowl to aerate the dry ingredients. In another bowl, whisk the milk, mashed banana, eggs and banana extract together. Pour those wet ingredients into the bowl of dry ingredients and whisk it together just until it is a smooth batter. Cover the bowl and let it rest in the refrigerator for 30 minutes to let the gluten relax.
  2. While the batter rests, make the banana bourbon sauce. Combine the water, sugar, pumpkin pie spice and banana in a small pot and heat it on the stove over medium high heat. Let it come to a gentle boil and cook for 5 minutes, stirring occasionally. Stir in the bourbon and let the sauce gently boil for another 10 minutes or so. It should become a thick, syrupy sauce. Turn the heat to the lowest setting and move the pot slightly off of the burner to just keep the sauce warm.
  3. Once the batter is rested, pre-heat your waffle iron. Be sure to read the instructions on your particular waffle iron to get the best results. Scoop 1/4 of the batter into the iron, just enough to cover the bottom. Close it and cook the waffle for 5 to 5 1/2 minutes to let it get golden and just slightly crispy around the edges. Serve it immediately when it is done with the warm sauce, banana slices and walnuts on top! Repeat with the rest of the batter to get 4 total. Enjoy a scrumptious brunch!
