Strawberry Bliss Energy Bites

It’s been a really busy summer here you guys, and that’s a good thing. That means that we do a lot of eating or snacking quickly though, which I am not as much a fan of. Luckily, we don’t have to rely on junky fast food when we are on the go with these strawberry bliss energy bites. The berries here are still such juicy jewels and I had to use them up. They are perfect for having a quick breakfast before running out the door or a snack when you don’t have time to sit down. Best of all, they’re only 5 ingredients and so simple!

All of the ingredients came together quickly in my food processor. I pulsed the strawberries, almonds, almond butter, and coconut together just until blended but not liquified. Then I stirred in coconut flour to help bind it all together.
I used my 1.5 inch cookie scoop to form 8 perfect little bite sized balls out of the mixture. Then they needed to firm up in the refrigerator so that they were easier to manage.

After they firmed up, I just coated them in more coconut and they were done! They really were so simple and I loved that. I whipped them up in no time, which I loved even more. Hope you all enjoy them too! xoxo

These are simple and amazing little strawberry bliss energy bites with lots of almond and coconut flavor! Perfect for breakfast or a snack on the go.

Ingredients
  • 1 cup chopped fresh strawberries
  • 1/4 cup sliced almonds
  • 1/4 cup shredded coconut plus additional for coating
  • 2 tablespoons almond butter
  • 2 tablespoons coconut flour
Instructions
  1. Combine the strawberries, sliced almonds, coconut, and almond butter in a food processor and pulse it all together until it is well mixed but not liquified. Then stir in the flour so that it is more moldable. Form the mixture into 8 little balls using a 1.5 inch cookie scoop and place them on a plate. Refrigerate them for 30 minutes to let them firm up. They will still be pretty soft though. Once they firm up, fill up a small bowl with more coconut and roll each ball in it to coat them. Enjoy as you want them, keep them stored in a sealed container in the refrigerator!
