Slow Cooker Pulled Pork

The slow cooker is a life saver on busy days, isn’t it? Everything just goes in on low heat, and in 7 hours there is a magically fork tender meal waiting with no work! Yesterday I decided to make a super flavorful slow cooker pulled pork since I had a lot of other things to get done and I didn’t want to have to babysit anything for dinner. We love pulled pork in this house so it was a natural choice. First, I gathered my ingredients.

I took my time at the market trying to find the prettiest pork shoulder I could. That was the hardest part of this recipe, let me tell you. All of the rest of the ingredients were really simple and I had most of them on hand already.

After that, I just combined all of those ingredients in my beloved slow cooker and it did the rest of the work for me! I set it to low for 7 hours and went about my day.

Once everything was done cooking, I removed the pork shoulder to let it rest. Then I took some of the liquid and got it on the stove to reduce. That really concentrated the flavors.

While the liquid reduced, I shredded the pork shoulder with two forks. It just fell right apart gorgeously! I made sure to get rid of the bone and fat back.

I transferred the slow cooker pulled pork into a serving dish and poured the reduced sauce all over it. Then I just quickly toasted rolls to make sandwiches and thinly sliced a red onion for a topping. That way hubby and I could just assemble the sandwiches to our liking. Oh my goodness, the sandwiches were ridiculous! The pork had such an incredible sweet heat going on. It wasn’t spicy, it was more of a slow warming that was needed on a cold night like last night. Ingredients
  • 2 cups apple cider
  • 1/2 cup bourbon
  • 1/2 cup maple syrup
  • 1/3 cup apple sauce
  • 3 whole chipotles in adobo sauce thinly sliced
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon minced garlic
  • 1 teaspoon hickory smoked sea salt
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon red adobo seasoning
  • 1 whole pork shoulder about 4 pounds
  • 6 big rolls
  • 1 small red onion peeled and thinly sliced
Instructions
  1. In the slow cooker, combine the apple cider, bourbon, maple syrup, apple sauce, chipotles, brown sugar, Dijon, Worcestershire sauce, garlic, salt, paprika, chili powder, and red adobo seasoning. Stir all of that together. Add in the pork shoulder and coat it in the liquid. Close the slow cooker and turn it to low. Let the pork cook until super tender for 7 hours.
  2. When it's done, remove the pork shoulder and let it rest for a few minutes. In the meantime, pour half of the cooking liquid into a pot on the stove and bring it to a low boil over medium high heat. Let it cook and reduce for 5 minutes, then set it aside.
  3. Take two forks and shred the pork shoulder. Discard the bones and fat back. Transfer the pulled pork to a serving dish and pour the sauce all over it. Toast the buns to make sandwiches, then just assemble to your liking with the red onion and any condiments! Enjoy!
