Mom’s Classic Meatloaf

Classic meatloaf was always a fixture in our house growing up. My mom made it often as something easy and hearty to put on the table. I absolutely lived for it. She would even mold it into a big heart for Valentine’s Day. The best part was always the glaze on top. I’ve been making it for years and I am so excited to finally share it! It is so simple and flavorful.

I had the most fun mixing the ingredients for the classic meatloaf together. There is something so therapeutic about squishing it all together with clean hands. The ingredients were easy too. My mom’s secret ingredient was a packet of onion soup mix, which gave it huge flavor.
After I pressed the meat mixture into my loaf pan, I made the glaze. Now, my mom always used ketchup here. I switched it up just a little and used HP sauce instead. HP sauce is huge in Britain and tastes like a combination of ketchup, steak sauce and malt vinegar. I’m obsessed with that stuff and get it shipped to me from Amazon a lot. The original ketchup also works so well though.
The classic meatloaf cooked for an hour and a half, which made it medium well. There was still a little pink in the middle, which was perfect. Definitely adjust the time based on your preference. For well done, an extra 15-20 minutes should do it.

I let the classic meatloaf cool and set for just a few minutes. Then it was time to dig in. It was just like my mom’s and took me right back to my childhood. There was so much flavor. I grew up having my mom's classic meatloaf so often as a simple, amazing dinner. I still make it to carry it on and am so excited to share the recipe!

Ingredients
FOR THE MEATLOAF
  • 2 pounds ground beef
  • 2/3 cup seasoned breadcrumbs
  • 1 packet Lipton onion soup and dip mix
  • 2 whole eggs
  • 1 pinch garlic powder
  • 1 pinch salt
  • 1 pinch freshly cracked black pepper
FOR THE GLAZE
  • 1/4 cup HP sauce or ketchup
  • 3 tablespoons dark brown sugar
  • 1 teaspoon ground mustard
  • 1/4 teaspoon nutmeg
Instructions
  1. Pre-heat the oven to 350 and line a sheet tray with aluminum foil. Get out a loaf pan. Combine the beef, breadcrumbs, onion soup mix, eggs, garlic powder, salt and pepper in a bowl and use your clean hands to thoroughly mix it together. Press the mixture firmly into the loaf pan and put the full loaf pan on the sheet tray. In another bowl, mix the HP sauce or ketchup, brown sugar, ground mustard and nutmeg together into a thick glaze. Spread the glaze evenly over the meatloaf and bake it for an hour and a half. An hour gets it to just slightly pink in the center. If you would prefer well done, let it go for an extra 15-20 minutes. Let it cool slightly, then serve immediately!

  1. We LOVE meatloaf in this house and it is absolutely one of our favorite family comfort meals. I never thought of using HP sauce or a soup mix though. I will definitely need to give that a try!

  2. My kids are not a fan of meatloaf because my hubby likes to add a lot of extra stuff to it. I might have to try them when he goes out of town for work and see what they think!!

  3. What an awesome idea to add the onion soup mix to the meatloaf! That’s something I always keep on hand, but never thought to add it to meatloaf!
