Easter is in just over a week and I can’t wait! We always do a huge feast at my Dad’s and I’ve mentioned before that I’m in charge of dessert. Since I don’t want to bring anything I haven’t made before, I always recipe test anything new I want to bring. I already worked on an absolutely gorgeous lemon lavender tart, which turned out perfectly. My family is a bunch of chocoholics though, so I also had work on something with chocolate. I should mention that I am a bit obsessed with Cadbury eggs right off the bat. I get ridiculously excited when I first see them hit the shelves for the season. So I decided to incorporate the mini eggs in incredible and simple mini egg magic bars!
All of the layers were so perfect together when I tried one. I was so happy! They are going to be perfect to bring for Easter and I can’t wait to make them again. It is such a festive treat with the colorful eggs on top. Hope you all love them too! xoxo
These are such wonderful and simple mini egg magic bars. The ingredients just get layered in the pan and baked to make the most fun and yummy Easter treat!
- 1 stick butter melted
- 1 1/2 cups graham cracker crumbs
- 1 cup chocolate chips
- 1 cup shredded coconut
- 1/2 cup chopped pecans
- 1/2 cup pine nuts
- 1 can sweetened condensed milk
- 1 cup Cadbury mini eggs
- Pre-heat the oven to 350 and get out a 9 x 13 baking dish. Pour the melted butter in first, then sprinkle in the breadcrumbs. Shake it and press it down so that it forms a firm base layer. Then sprinkle the chocolate chips in evenly, followed by the coconut, pecans and pine nuts. Pour the sweetened condensed milk all over the top and let it seep into the mixture to hold it all together. Finally, sprinkle the mini eggs all over the top and gently press them into the sweetened condensed milk so that they stay put. Bake the tray for 30 minutes. Let it cool for another 30 minutes, then cut into 24 even squares. Serve and enjoy!
