We love breakfast so much in this house. During the week though there is often just no time to sit down for it. So I am always looking for ways to make delicious, nutritious breakfast options to take to go on our busy mornings. To that end, this week I decided to get in on the energy bite craze with my own version of coconut almond energy bites. They were incredibly easy to make with so many good ingredients to start the day well!
I was so happy when I tried one of these babies! The crunchy oats, sweet honey, spices and coconut were gorgeous together. The ground flax seeds and almond butter added so much nutrition as well. They fueled me up for the day without being heavy. I also loved having them for an afternoon pick me up. I hope you all love them too! xoxo
These coconut almond energy bites are so tasty and incredibly easy to make with no baking required! They're perfect for an on the go breakfast or snack.
- 1 cup old fashioned oats
- 2/3 cup almond butter
- 1/2 cup flaked coconut
- 1/2 cup ground flax seeds
- 2 tablespoons honey
- 1/4 teaspoon ground ginger
- 1/4 teaspoon nutmeg
- Stir all of the ingredients together thoroughly in a large bowl. Put the mixture in the refrigerator for 30 minutes to firm up enough to roll. When the 30 minutes is up, take portions of the mixture and roll them into balls about the size of the palm of your hand. You should get about 16 or 17. Store them in a sealed container in the refrigerator and enjoy them as needed!

I love making these! My 3 year old enjoys pouring in the ingredients to help me. I’m not a fan of coconut, so I don’t add that. The chocoholic in me likes to make them with mini chocolate chips. Yum!
