Coconut Almond Energy Bites

We love breakfast so much in this house. During the week though there is often just no time to sit down for it. So I am always looking for ways to make delicious, nutritious breakfast options to take to go on our busy mornings. To that end, this week I decided to get in on the energy bite craze with my own version of coconut almond energy bites. They were incredibly easy to make with so many good ingredients to start the day well!

All I had to do was mix those wonderful ingredients together into a sticky, gorgeous dough. There were loads of oats, coconut, almond butter, honey, ground flax and spices. I loved how it smelled right away! That mixture needed to firm up so that I could roll it up into little balls, so I chilled it in my refrigerator for 30 minutes.
Once the mixture for the coconut almond energy bites firmed up, I rolled them into little bites about the size of my palm. They were so cute! I tried one right away, then stored the rest in the refrigerator to enjoy all week. This recipe made 17 total with the size I made mine.

I was so happy when I tried one of these babies! The crunchy oats, sweet honey, spices and coconut were gorgeous together. The ground flax seeds and almond butter added so much nutrition as well. They fueled me up for the day without being heavy. I also loved having them for an afternoon pick me up. I hope you all love them too! xoxo

  1. I’m actually always on the look out for a quick breakfast bite that is healthy, filling and will give me a boost to start my day. I want to try these! I’m so over granola bars!

  2. I love making these! My 3 year old enjoys pouring in the ingredients to help me. I’m not a fan of coconut, so I don’t add that. The chocoholic in me likes to make them with mini chocolate chips. Yum!

  3. I think I’m going to try this recipe. It looks delicious, but the best part is that it’s doesn’t seem complicated to make. I’m all for simple recipes!

  4. I think I would like these. I’ve been interested in trying different breakfast options that will give me energy and feel fulling until lunch time. Looks yummu
