Gingerbread Fairies

The first time I ever saw The Nutcracker when I was little, the Sugarplum Fairy instantly captured my imagination. Her iconic dance absolutely mesmerized me and it made me want to take ballet classes. I always watch The Nutcracker at least once during the season now. I love it so much that I even made a little tribute to it in cookie form! When I received a fairy cookie cutter I knew it had to happen. These gingerbread fairies were so festive and fun to make.

The dough for the gingerbread fairies came together quickly and easily in my beloved stand mixer. It had so many warm spices for big flavor! I chilled it for three hours to make it easy to roll out and cut.

The chilled dough was still a little sticky, so I made sure to flour my work surface well. Then it was easy to roll it out and use my adorable fairy cutter! I laid them out on my lined cookie sheets to decorate them with loads of green colored sugar.

The gingerbread fairies baked for 10-12 minutes. Oh my goodness did they make the house smell like the Holidays! They almost looked too cute to eat.

My recipe made about 32 gingerbread fairies total. That gave me plenty to pack into tins to give to people! Of course I had to have a few at home. They were everything I hoped for and more. The edges were slightly crisp and there was so much gorgeous spice. With a cup of hot cocoa I was in heaven! I also was ecstatic that these babies marked the end of my Holiday baking extravaganza. My poor oven is probably ecstatic too since it put in some major overtime. One more item checked off my massive list. I hope you all enjoy these gorgeous little delights! xoxo

These gingerbread fairies are so magical and perfect for Holiday baking! They're so warmly spiced and crispy with gorgeous green decoration.

Ingredients
  • 3 2/3 cups all-purpose flour
  • 2 1/2 teaspoons ground ginger
  • 2 1/2 teaspoons pumpkin pie spice
  • 2 teaspoons cinnamon
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon coriander
  • 1/2 teaspoon salt
  • 2 sticks butter softened to room temperature
  • 2 1/2 cups dark brown sugar
  • 2 whole eggs
  • 1/4 cup milk
  • 1 container green colored decorating sugar
Instructions
  1. Combine the flour, ginger, pumpkin pie spice, cinnamon, baking powder, coriander, and salt together in a bowl and whisk them together to aerate them. Set the bowl aside. Set up a stand mixer with the paddle attachment and combine the butter and brown sugar in its bowl. Beat them together thoroughly, then add in the eggs one at a time. Turn the speed to low and slowly add in the dry ingredients until a soft dough forms. Wrap the dough in plastic and chill it for three hours in the refrigerator.
  2. Take the dough out after the three hours is up and let it become a little pliable for a couple of minutes. Pre-heat the oven to 350 and line two sheet trays with silicone mats. Cut the dough in half and put half back in the refrigerator to stay cold. Turn the other half out onto a well floured surface and use a floured rolling pin to roll it out to be 1/8-1/4 inch thick. Use a fairy shaped cookie cutter to cut as many cookies out as possible. Dip the cutter in flour if needed to keep the edges clean. Roll the scraps out and cut out even more. Transfer the cookies to the sheet trays, with about 8-10 per sheet.
  3. Brush each cookie lightly with the milk and sprinkle them all very generously with the green sugar. Bake them for 10-12 minutes, until the edges start to brown and the cookies are slightly crisp. Let them cool for a couple of minutes before transferring them to racks to finish cooling. Repeat the whole process with the other half of dough. Seal the cookies in tins and leave them for Santa to enjoy!

  1. I like the fairies! We have done gingerbread ninjas, zombies, and last year we had some Harry Potter cookie cutters. It’s fun to do gingerbread cookies differently!
