I always look for ways to switch up breakfast and make it more fun and interesting. The benefits double when it is something I can freeze to do breakfast meal prep for the week! Marc and I both need a hearty breakfast and strong coffee to get us going in the morning but during the week there is no time to cook. So these everything breakfast bombs really came to the rescue! They were simple to make with everything a hearty breakfast should have wrapped up in a cute biscuit package. I also mimicked the everything seasoning that you find on bagels to sprinkle on top, so the “everything” in the title has double the meaning. See what I did there?!
Once they baked for 20 minutes or so, they were golden perfection. They tasted even better than they looked. I LOVED how the biscuit was such a perfect vehicle to wrap up all of that savory filling. These babies were everything I love about breakfast in one bite. Marc and I each had one, then I froze the rest. They heated up well in the oven all week, and we could even take them on the go. All of the best flavors of savory breakfast come together in these incredible everything breakfast bombs with sausage, egg and cheese wrapped up in biscuits that mimic everything bagels!
- 5 tablespoons butter divided
- 12 ounces turkey breakfast sausage links casings removed
- 8 whole eggs
- 1/4 cup half and half
- 1/2 teaspoon salt
- 1/2 teaspoon dried tarragon
- 1 pinch black pepper
- 1 tablespoon whipped chive cream cheese
- 1 can Grands Southern Style biscuits 16.3 ounces
- 1/2 cup shredded cheddar cheese
- 1 teaspoon poppy seeds
- 1 teaspoon sesame seeds
- 1 teaspoon dried onion
- 1 teaspoon garlic powder
- ketchup or HP sauce for dipping

First, pre-heat the oven to 375 and line a sheet tray with a silicone mat. Then melt 4 tablespoons of the butter in the microwave and set it aside. Take the remaining tablespoon of butter and heat it in a large, preferably non-stick skillet, over medium high heat. Cook the sausage in it until cooked through completely and slightly brown while you break it up into crumbles. While it cooks, whisk the eggs, half and half, salt, tarragon and black pepper together thoroughly in a bowl. When the sausage is done, pour in the egg mixture over it and stir it pretty constantly until it is fully cooked into soft, fluffy, sausagey scrambled eggs. Take it off of the heat and stir in the cream cheese for added flavor and creamy texture.

Then it's time to form the breakfast bombs. Take the raw biscuits and flatten each of them into 1/4 inch thick discs. Evenly distribute the sausage scrambled eggs into a mound in the center of each disc and then evenly sprinkle the cheddar cheese on top of each egg mound. Stretch the sides of the biscuit disc up and over the filling and pinch them together firmly to enclose it, then place each formed bomb on the sheet tray seam side down. Brush them all with the melted butter generously. Then stir the poppy seeds, sesame seeds, dried onion and garlic powder together and sprinkle each bomb generously with that mixture to mimic an everything bagel. Bake them for 20-22 minutes, until golden brown on the outside. Let them cool for 5 minutes, then serve immediately warm with ketchup or HP sauce for dipping!
