Everything Bagel and Lox Casserole

Every time Marc and I go to the city, we head to Ess-A-Bagel for breakfast. It’s a must. They have their signature sandwich that I live for. It was filled with lox, scallion cream cheese, tomato, and capers on a toasty everything bagel. I never even liked lox until I ate their amazing version and it completely converted me. This week, I wanted to make something special for brunch to enjoy the long weekend with Marc. So I made an amazing everything bagel and lox casserole inspired by my favorite breakfast sandwich. It was so easy to make!

The everything bagel is my absolute favorite type of bagel in the world. It’s the best of all worlds in one bite! I cut mine up into bite sized pieces to make this almost like a savory bread pudding.
I layered the diced up everything bagel in first, followed by the lox, scallions, capers, and chopped tomato. It had all of the goodness of that sandwich going on, and I wasn’t done yet!
After I layered in those ingredients, I made my custard to hold the everything bagel and lox casserole together. The whipped cream cheese just made it with its creamy texture and wonderful flavor.
Once I poured that custard evenly all over the casserole, I covered it and refrigerated it overnight. Sitting overnight really allowed the flavors to marry and for the bagels to absorb the liquid.

In the morning, I just put the casserole in the oven to bake! It was perfect because it made the morning much easier. Instead of cooking I could spend time with Marc. After it baked for about 45 minutes, breakfast was ready. I let it cool and set for just a few minutes before I cut into it. Oh my goodness, we were instantly back in NYC enjoying our favorite breakfast sandwich without even getting on the train. It was such a fantastic way to start the day and celebrate the long weekend. Ingredients
  • 4 whole everything bagels diced small
  • 8 ounces smoked salmon diced small
  • 1 bunch scallions thinly sliced
  • 1 jar capers drained, 3 fluid oz size
  • 1 whole fresh tomato diced small
  • 5 whole eggs
  • 1 cup milk
  • 1 cup whipped chive cream cheese
  • 1 pinch salt
  • 1 pinch freshly cracked black pepper
  • 1 pinch garlic powder
Instructions
  1. Get out a 9 x 13 baking dish and spray it well with cooking spray. Add the diced up bagels to it in an even layer. Then sprinkle the chopped smoked salmon, scallions, capers and fresh tomato evenly over the bagels. In another bowl, whisk the eggs, milk, cream cheese, salt, pepper and garlic powder together thoroughly. Pour it evenly over the casserole, then press everything down lightly to make sure the casserole is even and submerged. Cover it and refrigerate it overnight. In the morning, pre-heat the oven to 350. Bake the casserole for 45-50 minutes, until it is set and the bagels start to crisp around the edges. Let it cool and set for just a couple of minutes, then cut it and serve immediately. Enjoy!

  1. There’s not even a 1% chance I could get the rest of my family to eat this, but I think it looks amazing! My Grampa and I used to eat smoked salmon and cream cheese bagels together when I was a kid. Good times and good memories!
