Simple chicken dinners are always fool proof for dinner. Bread some boneless, skinless tenders, stick them in the oven and voila, it’s ready in 30! This time though, I used potato chips instead of breadcrumbs to give the chicken an incredible crust. They added a whole new depth of flavor and texture to the usual!
I just served them with some salad and potatoes for a complete meal. Oh my gosh, the truffle chips made such an incredible, flavorful and crisp coating. While those chicken tenders were baking, I could throw those sides together and have dinner on the table quickly. Hope you all enjoy it as much as we did here!! xoxo
This is such a simple and wonderful recipe with chicken tenders breaded in crispy potato chips. They're baked to perfection for a dinner the whole family will love!
- 8 whole boneless, skinless chicken tenders
- 2 whole eggs lightly beaten
- 1 dash water
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 6 ounces potato chips I used white truffle potato chips!

Pre-heat the oven to 375 and line a baking sheet with parchment or foil. Take the potato chips and crush them into a fine crumb, either in a food processor or just sealed in a zip top bag with a rolling pin. Set the crumbs aside. Stir the beaten eggs, water, salt, pepper and garlic powder together in a bowl. Set up a line with the chicken first, the egg mixture next and finally, the potato chip crumbs. Coat the chicken tenders with one hand in the egg mixture, then use the other hand to coat it in the potato chips. As you coat each one, lay them out in a single layer on the lined sheet tray. Bake the chicken for 30 minutes so that the chip crumbs get golden and crisp. Serve immediately with your favorite sides and enjoy!
