Cheesy Mashed Cauliflower

I don’t think I’ve ever appreciated cauliflower enough until I started experimenting with low carb dishes. Now I don’t think I could live without it. Since I am starting to think about Easter sides, I decided to test a low carb version of mashed potatoes with using cauliflower instead. Oh my goodness, I didn’t miss the potatoes at all! This cheesy mashed cauliflower was creamy and flavorful and everything I wanted in a side.

First, I cut my whole head of cauliflower into little florets and boiled them in salted water. It took about 30 minutes for it to become super tender and mashable. Then I drained it and got to work adding the rest of the ingredients.
I added lots of cheddar cheese, chives, Greek yogurt for some creaminess and protein and seasoning after I mashed the cauliflower and stirred it all together thoroughly. That was all there was to making this gorgeous side!

It yielded plenty for 6 people and let me tell you, Marc and I sure enjoyed the leftovers. I can’t wait to make it again once Easter rolls around. I loved that it tasted decadent but was still lean and low carb compared to traditional mashed potatoes. Hope you all love it too! xoxo

This cheesy mashed cauliflower makes such a wonderful, creamy and flavorful side that is low carb and simple! It’s so perfect to complement any meal.

Ingredients
  • 2 pinches salt
  • 1 head cauliflower cut into small florets
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup Greek yogurt
  • 1/4 ounce fresh chives thinly sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon turmeric
  • 1/2 teaspoon paprika
Instructions
  1. Bring a pot of water to a boil and season it with two very generous pinches of salt. Add the cauliflower florets and boil them until completely tender and mashable, for about 30 minutes. Test them with a fork to make sure. Once they are done, drain them and return them to the pot. Use a potato masher to mash them thoroughly, then add in the remaining ingredients. Stir it all together thoroughly, transfer to a serving dish and serve immediately! Enjoy!!
