Lemon Lavender Granola

Granola is such a staple in this house. I love having it in my morning yogurt or to snack on. It is so crunchy, satisfying, and just generally wonderful! With spring here I decided to make a big batch with the flavors of the season in this gorgeous lemon lavender granola. It was really easy to make and with much less sugar and preservatives than the store bought brands!

To start, I simply stirred all of the ingredients together thoroughly in a mixing bowl. There were loads of oats, nuts, pumpkin seeds, raisins, lavender infused honey and lemon juice. It was looking so good already! I laid it out on my lined and well greased sheet tray and baked it for 30 minutes.
After the 30 minutes the lemon lavender granola was looking golden and lovely! I broke it up thoroughly and stirred it around. Then it had to go back into the oven to dry out for 2 hours. I had turned off the oven but the heat stayed in it for a while, which was perfect for making the granola really crunchy in that 2 hours.

After it dried out, I just stored it in an airtight container and I was all set to use it in countless ways! I’ve used it in my yogurt like I mentioned, in pancakes, in oatmeal for some crunch, you name it. Hope you all love it too! It keeps for a while. xoxo

  • 3 cups quick cooking oats
  • 2 cups raisins
  • 1 cup slivered almonds
  • 1 cup pumpkin seeds
  • 1 tablespoon fresh lemon zest
  • 1 teaspoon ground lavender
  • 1/2 teaspoon lavender extract
  • 3/4 cup lavender infused honey
  • 3/4 cup fresh lemon juice from about 5 lemons
  1. Pre-heat the oven to 400 and line a sheet tray with a silicone mat. Grease the mat with the vegetable oil. Bake the granola for 30 minutes, then turn the oven off and break it all up and stir it. Put it back into the still warm oven for 2 hours to dry out completely. Then store it in an airtight container to use as needed! It lasts for at least a week.

  1. Lavender-infused honey, what a wonderfully creative idea! Can’t wait to try this recipe next time I’m in need of a sweet snack.

  2. I love homemade granola so much, it’s way better than store bought! I am also loving this flavour combination, it’s so perfect for Spring! I’ve not used lavender in cooking/baking before but I really need to as this looks like the perfect way to start the day!

  3. The title alone includes 3 of my favorite ingredients to cook with so I’m sold!

  4. Granola is certainly a tempting snack. The homemade granola not only tastes good but, it is far healthier than an option offered by many companies dealing in the product.
