I don’t think there is any cuisine like New Orleans cuisine. Beignets with chicory coffee, jambalaya, dirty rice and gumbo are all just so darn yummy. Even though I am not well versed in cooking it authentically (I’ll just own that right off the bat), I love it so much. So I decided to do my own little take on dirty rice that is leaner and low carb with this Cajun spiced cauliflower rice! It was chock full of flavor and had loads of chicken sausage, red bell pepper and onion. Best of all it was so simple and done in one pan!
Oh my goodness, the Cajun spices warmed me right up in this cold and the dish was so hearty. I will never, ever get tired of the sausage, pepper and onion combo and this time was no different. Hope you all enjoy my take on some New Orleans food as we get ready for Mardi Gras in about a month! xoxo
This is such a fantastic and simple one pan cajun spiced cauliflower rice loaded with lean chicken sausages, peppers and onion! Low carb and very flavorful.
- 1 dash olive oil
- 24 ounces chicken sausage links sliced into thin rounds
- 1 whole red bell pepper seeded and diced small
- 1 whole onion diced small
- 1 tablespoon Cajun seasoning
- 1 pinch salt
- 2 tablespoons tomato paste
- 1 tablespoon chicken stock
- 21 ounces frozen riced cauliflower

Get out a large skillet with deep sides and heat the olive oil in it over medium high heat. Brown the sausage in it for about 4-5 minutes, then add in the pepper and onion. Let them get soft and fragrant for another couple of minutes while you season everything with the Cajun seasoning and salt. Then stir in the tomato paste and chicken stock and let it all simmer for another 5 minutes. Finally, just stir in the cauliflower rice and let it completely warm up and cook for 6-8 minutes while you keep stirring. Serve immediately and enjoy!!
