My husband loves all food, but at heart he is a meat and potatoes guy all the way. I love thinking up new (and easy) ways to prepare potatoes to go on the side of our meals. These mustard tarragon roasted potatoes fit the bill perfectly! They were so simple and so flavorful to go with any main course.
That was all there was to it! I served them with seared steaks and it was pure heaven. The mustard and tarragon really elevated them to something special. My meat and potatoes loving hubby was in heaven too, ha! Enjoy friends. xoxo
Mustard Tarragon Roasted Potatoes

Ingredients
- 4 whole yukon gold potatoes cut into small wedges
- 1/3 cup Dijon mustard
- 1 tablespoon white wine
- 1 tablespoon olive oil
- 1 sprig fresh tarragon roughly chopped
- 1/2 teaspoon salt
Instructions
- Pre-heat the oven to 400 and get out a 9 x 13 baking dish. Add the potatoes into the dish and set it aside. In a bowl, stir the mustard, white wine, olive oil, tarragon and salt together. Pour it over the potatoes and toss them together completely to coat the potatoes.
- Get the baking dish into the oven for 50 minutes, until the potatoes get golden and tender. Take them out and let them cool for a minute or so, then serve immediately!
