Strawberry Granola Pancakes

Pancakes are a big deal in this house. I make them virtually every weekend in every flavor imaginable! This weekend, I decided I wanted to use the incredible maple pecan granola I made to give my usual pancakes fantastic texture and flavor. These strawberry granola pancakes were packed with nutritious goodies!

The key to making these strawberry granola pancakes super airy and fluffy was to whip up my egg whites. Folding those cloud like egg whites into the batter made them puff up so gorgeously. I do this with every pancake batter I make and it is so worth the extra step.

From there the batter came together quickly. The wet ingredients were just whisked into the dry ingredients before I folded in the egg whites and granola! I used oat flour and strawberry Greek yogurt to give these strawberry granola pancakes lots of substance.

I used my trusty electric griddle to cook off that lovely batter in batches. They needed to cook for about three minutes on each side to get puffy and golden. I served them as they were done and there were plenty of leftovers! With the size I made mine, I yielded 15 strawberry yogurt pancakes.

I garnished the pancakes with fresh strawberries and lots of maple syrup when I plated them. Oh my goodness, these babies were perfect for brunch! They were still sweet but had so much substance to them without being heavy at all. The whipped egg whites gave them the mouthfeel of clouds while the granola gave them some crunch. I can’t wait to have breakfast for dinner with the rest of them this week. Enjoy! xoxo
