You all know that I love baking from scratch. It’s one of my favorite activities and so therapeutic to me. There are times though when I need to pull a dessert together really fast. Maybe last minute guests call to say they want to come by or there is an event I forgot I needed to bring something to. So I always keep a couple of cake and/or brownie mixes in my pantry to save the day when that happens. I usually have ingredients on hand to help dress them up and make them seem completely homemade too. This week I decided to use the strawberry cake mix in my pantry to make the most simple and amazing strawberry chocolate mascarpone brownies. It came together so quickly and easily!
I loved how easy these babies were to make. They didn’t require much equipment or measuring so I was able to put them together and clean up relatively quickly before I let them sit to completely cool. When I tried one I was really happy with the mouthfeel the mascarpone gave them, and the little hit of sweet acidity from the balsamic I used. It was a fancy looking dessert without the fuss for any last minute shindig! Hope you all love them too, xoxo
These are such simple and amazing strawberry chocolate mascarpone brownies with a strawberry cake mix perfectly dressed up for a fun dessert!
- cooking spray for the baking pan
- 1 box strawberry cake mix
- 1/2 cup mascarpone cheese
- 1/3 cup canola oil
- 1 whole egg
- 1/2 teaspoon balsamic vinegar
- 1/3 cup semi-sweet chocolate chips

Pre-heat the oven to 350 and spray an 8 x 8 baking dish really well with cooking spray. Then use good old elbow grease and a mixing spoon or an electric hand mixer to completely mix the cake mix, mascarpone, canola oil, egg and balsamic together in a large mixing bowl. It will be extremely thick and sticky, almost like silly putty. Press the batter into an even layer in the prepared pan and bake it for 30-35 minutes, until golden around the edges and completely set in the center.

When the brownies are finished baking, let them cool for at least 1/2 an hour. While they cool, melt the chocolate chips in the microwave in 30 second increments until they are completely melted, stirring after each time you microwave them. Drizzle the melted chocolate over the cooled brownies in thick stripes. Then let them cool completely and the chocolate harden. You can even chill them in the refrigerator a little to speed this up. Cut them into 16 equal squares and serve! These keep for a couple of days too in a sealed container.
