I love when two of my great (food) loves come together into an easy dinner! Pizza and seafood are definitely in the top 5 favorites in this house for both me and Marc, so this week I made wonderful and simple crabby melts. They’re basically glorified pizzas with a yummy crab mixture topping and layer of spicy pepper jack on top for some kick. I had them on the table in 30 minutes too!
When they came out of the oven they were melty perfection! I loved how quick and simple they were so much. Gotta love glorified pizza. Hope you all enjoy them too!! xoxo
These are such incredible and simple crabby melts with a gorgeous crab mixture spread on garlic ciabatta and topped with lots of melty cheese!
- 1 loaf ciabatta bread
- 5 tablespoons butter
- 2 cloves garlic
- 16 ounces crab meat
- 1 jar roasted red pepper 12 ounces, drained and diced
- 1 whole fresh tomato diced small
- 6 leaves fresh basil roughly chopped
- 1/3 cup creme fraiche
- 1/2 teaspoon old bay seasoning
- 1 pinch salt
- 8 slices pepper jack cheese

Pre-heat the oven to 350 and line a sheet tray with foil. Slice the ciabatta loaf in half lengthwise and then horizontally so that you have 4 equal pieces. Combine the butter and garlic in a microwave safe bowl and microwave it until melted for about a minutes. Evenly brush it all over the 4 pieces of ciabatta and toast them in the oven for 10 minutes. While they toast, stir the crabmeat, roasted red peppers, tomato, basil, creme fraiche, old bay and salt together in a bowl thoroughly.

When the garlic bread is done, divide the crab mixture evenly among the 4 pieces of ciabatta and spread it out in an even layer. Top each piece with two slices of pepper jack cheese and return the sheet pan to the oven for another 10 minutes. The cheese should get bubbly and the mixture cooked through. Serve immediately and enjoy!

YUMMY! We make something similar, but it’s crab on an English muffin with a slice of tomato and cheddar cheese melted on top. I can’t wait to try this one!

I’ve never heard of crabby melts but love how simple this recipe is. And I agree that you can’t go wrong with buttery garlic ciabatta bread!
