We love weekend treats in this house. After a long week of work, it’s something small but yummy to look forward to knowing there will be fluffy pancakes or donuts to indulge with on Saturday and Sunday morning. I am also getting so geared up for summer, and nothing says summer fun to me like a margarita. So I combined both of those into one fantastic donut! Let me tell you, these margarita donuts are a party for your mouth. Fluffy, sweet, salty and just boozy enough, you’ll love ’em!

These margarita donuts are so light and fluffy from being baked with all of the fun summer flavors of a margarita with lots of lime and tequila!
- 1 cup all-purpose flour
- 1/2 cup super fine sugar
- 1 teaspoon baking powder
- 1 tablespoon cocoa powder
- 1/2 teaspoon cinnamon
- 1 pinch salt
- 3 tablespoons milk
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 2 tablespoons olive oil
- 1 tablespoon tequila
- 1 whole egg
- 1 cup powdered sugar
- 2 whole limes juiced
- 1/4 cup water
- lime infused sea salt for topping

Pre-heat the oven to 375 and spray a 6 well donut baking pan really well with cooking spray. Then whisk the flour, sugar, baking powder, cocoa powder, cinnamon and salt together in a bowl. Set up a stand mixer with the paddle attachment and combine the milk, lime juice, lime zest, olive oil, tequila and egg in its bowl. Beat them together thoroughly, then slowly pour in the dry ingredients until you have a lovely batter. Transfer the batter to a piping bag and evenly pipe it into the donut pan. Bake the donuts for about 15 minutes, until puffy and golden around the edges. Take them out and let them cool for half an hour.

While they cool, make the easy glaze. Simply stir the powdered sugar, lime juice and water together in a bowl. Dip each donut in the glaze to submerge half of it, then put the donuts on a plate with the glazed side up. Sprinkle them with the lime sea salt on top, then serve and enjoy! They also keep well for a day sealed up.
