Breakfast is life in this house. I can’t function unless I have a good one washed down with some strong coffee. That is why I absolutely adore breakfast casseroles because I can get a complete breakfast in one lovely bite. I’ve made a bunch on this blog, but this is my first low carb breakfast casserole. The base is made of cauliflower tots and I also used turkey sausage to keep it a little leaner. Best of all it was really simple to put together and bake!
Oh my goodness, this was everything I wanted in a breakfast. The tots were a fantastic base with all of those soft, creamy eggs and sharp cheddar cheese. The sausage made it so hearty. Most of all, I loved how easy it was. It’s perfect to throw together on a weekend morning for brunch. While it bakes, it’s mimosa time! Ha!! Hope you all love it too. xoxo
This low carb breakfast casserole is so wonderful and simple to put together with a cauliflower tot base, eggs, turkey breakfast sausage and cheddar!
- 1 dash olive oil
- 12 ounces turkey breakfast sausages casings removed
- 8 whole eggs
- 1/4 cup milk
- 1 tablespoon HP sauce or ketchup or sriracha
- 2 pinches salt
- 2 pinches black pepper
- 1/2 teaspoon dried onion
- 1/2 teaspoon dried parsley
- 1 bag frozen cauliflower tots 14 ounces
- 4 ounces shredded cheddar cheese
- 1 bunch scallions light green and white parts only, thinly sliced

Pre-heat the oven to 350 and spray an 8 x 8 casserole dish with cooking spray. Then heat the olive oil in a skillet over medium high heat. Brown the turkey sausage in it, crumbling it as it cooks. Set it aside to cool a bit when it is done. Whisk the eggs, milk, HP sauce (or substitute) salt, pepper, dried onion and dried parsley together thoroughly in a bowl, making sure to get some air into it. It's time to assemble! Lay out the tots in the bottom of the casserole dish in an even layer. Stir the cooled sausage into the egg mixture and pour it all out evenly over the tots. Finally, sprinkle the cheddar evenly on top. Bake the casserole for 45-50 minutes, until completely set and just starting to brown around the edge. Sprinkle the scallions on top and let the casserole cool and set for 10 minutes. Cut and serve immediately! Enjoy!!
