Breakfast is king in this house, especially on the weekends. We love our pancakes, and we love our savory dishes. So I am always trying to come up with new and fun ways to enjoy our breakfast staples that are still simple enough to do before I’m fully caffeinated. This easy breakfast pie fit the bill absolutely perfectly!
The final touch came when I sprinkled lots of everything bagel seasoning on top! It melded right into the hot cheese when it came out of the oven. I sliced it into 4 pieces, so that meant we had leftovers for the next morning as well. That made us super happy because this pie was a huge hit. This is such a wonderful and easy breakfast pie loaded with eggs, ham and cheddar with a hashbrown crust!
- Cooking spray for the pie plate
- 16 ounces frozen hashbrowns
- 5 slices deli ham diced small
- 6 whole eggs
- 3 tablespoons water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cumin
- 3/4 cup shredded cheddar cheese
- everything bagel seasoning for sprinkling on top

Pre-heat the oven to 350 and spray a 9 inch pie plate with the cooking spray. Press the frozen hashbrowns into the pan to form a crust. It will be a little tough since they are frozen and the pie plate will seem full. That's ok. Bake the hashbrowns in the pie plate for 20 minutes. Then they will be much more pliable. Press them firmly now into the plate to make room for the filling. Add the diced ham to the pie pan and let it all cool slightly while you make the egg mixture.

Whisk the eggs, water, salt, pepper and cumin together in a bowl. Pour that mixture over the ham in the crust. Finally, evenly spread the cheese out on top. Bake the pie for 35 to 40 minutes, just until the hashbrowns become golden and start to brown and the filling is completely set. Take it out and sprinkle the top generously with everything bagel seasoning. Let it set for a couple of minutes, then slice it into 4 equal pieces and serve immediately! Enjoy!
