I never liked cauliflower as a kid. Now I absolutely love it, especially roasted. It really takes on any flavor profile you want to give it while having a wonderful texture. Roasting it whole is even better! It’s simple and looks like a showstopper on a table. So this version with loads of curry powder and seasoning is just perfect for a side dish that comes together in minutes.
When it came out of the oven, it was a thing of beauty. It was golden brown, smelled heavenly and tasted even better than it looked. I sliced it into 6 larger pieces like a cake to go on the side of some chicken and salad! All of the curry powder gave it a nice kick without it being overpowering, and it was so tender in the middle while being slightly crisp on top. Hope you all enjoy this simple side too! xoxo
A gorgeous side dish with a whole cauliflower roasted in lots of olive oil, curry powder and seasoning. So simple and flavorful!
- 1 head cauliflower
- 2 tablespoons curry powder
- 2 teaspoons salt
- 1 1/2 teaspoons black pepper
- 3 1/2 tablespoons olive oil

Pre-heat the oven to 375 and line a sheet tray with foil. Take the cauliflower head and cut out the bottom stalk, removing the leaves as well. Place it on the tray and evenly season it with the curry powder, salt and pepper. Pour the olive oil over it and work it all into the cauliflower with your hands. Cover it with more foil so that it steams. Roast it for an hour. Then remove the foil and roast it for another 30 minutes so that the top gets a little crisp. Slice it and serve immediately with your main course! Enjoy!!
