Beef Stuffed Potato Pancakes

This recipe for beef stuffed potato pancakes came from pure restaurant inspiration. My husband and I popped into a restaurant that specialized in any kind of pancake imaginable. When we ordered, Marc went straight for the potato pancakes they had stuffed with beef while I went for a savory crepe. Well he went absolutely nuts for his dinner. This was years ago. When we were in the area again we wanted to go there for dinner again since we loved it so much. Well, we were heartbroken to find out it had closed. So I promised Marc I would work on creating those yummy beef stuffed potato pancakes at home. We both adored how they came out!

I worked on the potato pancake mixture for the recipe first. It took a little elbow grease to peel and shred 8 potatoes, especially since one of my peelers decided to break. Once I finished that fun task, I used a paper towel to wring out most of the moisture. That way the pancakes wouldn’t be soggy. After that, I just mixed in the rest of the ingredients.
Then I quickly made the beef filling. It had so much flavor from seasoned breadcrumbs, mustard, Worcestershire and lots of seasoning. An egg held it all together.
I formed the beef stuffed potato pancakes right on my trusty griddle. First, I scooped a little of the potato mixture on and flattened it out. Then I spread a smaller scoop of the filling right on the pancake before I closed it up with more potato mixture.
The beef stuffed potato pancakes cooked for about 5 minutes on each side to get crispy and gorgeously golden. I ended up cooking 3 batches of 6 to make 18 total. Then I served them immediately!

Oh my goodness, these made us so happy. They were exactly what Marc and I were craving. I loved that they were crispy on the outside and so meaty on the inside. To me, texture is so important. They made up for the disappointment we felt when we discovered that awesome restaurant closed. Hope you all love them too! xoxo

Ingredients
FOR THE POTATO PANCAKES
  • 8 whole yukon gold potatoes peeled and shredded on a box grater
  • 3 whole eggs
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon Lawry's seasoned salt
  • 1 pinch freshly cracked black pepper
FOR THE BEEF FILLING
  • 1/2 pound ground beef
  • 1 whole egg
  • 1/4 cup seasoned bread crumbs
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon Lawry's seasoned salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried onion
  • 1/2 teaspoon dried parsley
  • 1 pinch freshly cracked black pepper
  • 1 dash worcestershire sauce
  • 2 tablespoons butter for the griddle
  • sour cream or ketchup for dipping
Instructions
  1. First, make the potato pancake mixture. Take the shredded potato and really ring it out well with some paper towel so that it isn't soggy. Then mix it in a large bowl with the eggs, flour, baking powder, salt and pepper thoroughly until you have a uniform potato pancake batter. Then make the filling. Simply combine the beef filling ingredients together in another bowl and mix them together well. Set both the pancake mixture and filling aside. Pre-heat an electric griddle to 375 or a griddle pan over medium high heat. Grease it with one tablespoon of the butter.
  2. Then scoop a heaping tablespoon of the potato mixture onto the griddle and use the spoon to flatten it out. Spread two teaspoons of the beef mixture in a thin layer on top of the pancake, then scoop another tablespoon of the pancake mixture to close it up. Flatten it out as much as possible, then continue forming pancakes quickly to fill up the griddle. I did 6 at a time. Cook them for 5 minutes on the first side, then flip them over to cook for another 5 minutes. Remove them to a plate and tent them with foil to keep them hot. Repeat with two more batches to make 18 pancakes total. If the griddle gets too brown, wipe it down between batches and use the other fresh tablespoon of butter. Serve them immediately with either sour cream or ketchup for dipping!

  1. I love potato pancakes on their own! I’ve never thought to stuff them with anything. I might need to try this for my kids since I don’t eat meat
