During a busy week, it is all about breakfast on the go. I get really cranky if I don’t eat in the morning but sometimes there is no time to sit down for breakfast. You know what I mean? My go to breakfast on the go is usually a granola bar or energy bar of some sort. This week I decided to make my own homemade oatmeal fig bars! I was inspired by the jar of fig jam I had sitting in the pantry, looking all sad and unused. First, I set about making the easy dough. It was the same method as making an oatmeal cookie dough!

These oatmeal fig bars are such an amazing breakfast or snack! They are cut into convenient squares to easily take on the go.

Ingredients
- 2 sticks butter
- 2 1/4 cups oat flour
- 2 cups old fashioned oats
- 1 tablespoon wheat germ
- 1 1/4 teaspoons baking soda
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 2 1/4 cups dark brown sugar
- 1 teaspoon vanilla
- 1 whole egg
- 1 jar fig jam 11 ounce size
Instructions
- Pre-heat the oven to 350 and liberally grease a 9 x 13 pan with softened butter or shortening. Put the butter into a sauce pan and heat it over medium heat. Let it bubble and cook for 3-5 minutes just until it becomes brown. Set it aside to cool. Combine the oat flour, oats, wheat germ, cinnamon and salt in a bowl. Whisk it all together to aerate those dry ingredients and set them aside.
- Set up a stand mixer with the paddle attachment. Combine the brown sugar and cooled brown butter in its bowl and beat them together until fluffy. Add the vanilla next, followed by the egg, letting them get mixed in. Then turn the speed to low and slowly add the dry ingredients until you have a sticky dough. Divide the dough in half and press the first half into the bottom of the pan evenly to form a thin bottom layer. Spoon the fig jam over the bottom layer and spread it out to become an even second layer. Take the second half of dough and crumble it in an even layer on top of the fig jam.
- Bake the bars for 35-40 minutes, until the dough is completely baked through and almost crispy around the edges. Let the bars completely cool for at least an hour. Then cut and serve immediately!

I’ve never used figs in cooking before, but I love how they taste. These look delicious and would make a great snack for me to have at work because I don’t like to eat a big breakfast.

I used a 15 oz jar of gingered fig jam (on hand) with this recipe. It is a winner and worth making again. I am gluten free so used gluten free whole oats and made my own oat flour in the Ninja. I did use the wheat germ because I wanted to test the recipe as closely as possible. To stay totally gluten free, next time, I might use some finely chopped walnuts for the texture, or just a few more whole oats.
