My Nana Lulu had a brother named Eddie whom I adored. He was zany, hilarious and so incredibly sweet. During World War II he was stationed in England when he got sick. He was sent to a local family in Ipswich to take care of him and that is where he met his English rose Jean. They fell madly in love and I am sighing about the romance just writing about it. Jean is the reason I love all things British. I could listen to her talk in her beautiful accent forever and we were very close. We even celebrated our birthdays together since hers was just 3 days before mine. Geminis unite! She taught me everything from fun British phrases to the monarchy and of course classic English dishes. That included these simple and amazing bacon butty sandwiches!
I thought of my lovely Great Aunt Jean as soon as I bit in to the bacon butty. She absolutely loved them and I had so much fun carrying them on. I hope you all enjoy these simple, scrumptious sandwiches too! They’re so perfect for breakfast, brunch or lunch. xoxo
