When the temperature drops I love to have spicy food. It warms me up from the inside out and I love it! Egg in the hole is such a classic, fun breakfast and we eat a lot of them here in this house. I love them because they are so fast, easy and scrumptious. So this weekend I decided to bring the heat a little with this spicy egg in the hole version! The process was exactly the same as the classic. I just incorporated jalapeno and salsa to spice them up.

The classic gets a heated upgrade with this spicy egg in the hole breakfast! Sliced jalapeno, cheddar and salsa give this version loads of flavor.

Ingredients
- 1 tablespoon butter for greasing the griddle
- 2 slices whole grain sandwich bread
- 4 thin slices jalapeno pepper use the rest in omelettes or soup later!
- 2 whole eggs
- 2 pinches shredded sharp cheddar cheese
- 2 pinches salt
- 2 spoonfuls salsa for topping
Instructions
- Pre-heat an electric griddle to 350 or a large non-stick griddle pan over medium high heat. Use a 2.5 inch biscuit cutter to cut a perfect hole in the center of each slice of bread. Grease the griddle with the tablespoon of butter and toast both the bread and the cut out circles on the first side for a minute. Then flip them over.
- Place two jalapeno slices in the hole of each slice of bread, then crack an egg into each hole with them. The egg will surround the jalapeno. Place a pinch of shredded cheddar and salt on top of each egg and let everything cook for about 2 minutes. The egg whites will start to look white instead of clear. Remove the cut out circles of bread to plates at this point and carefully flip the bread slices over to set the yolk for 30 seconds. Plate the bread slices when the 30 seconds is up and top each of them with a spoonful of salsa. Serve immediately and enjoy!

My husband loves jalapenos but I can’t tolerate spicy foods. This would be the perfect way to improve upon his breakfast because it would be easy enough to leave the pepper out of mine.
