One of the best parts about the weather getting warmer is throwing fun outdoor parties with refreshing cocktails. I’ve already talked about how my lovely British great aunt made me a complete anglophile in my recipe for bacon butty sandwiches. Well this classic Pimm’s cocktail goes into the Aunt Jean favorites file. When we celebrated our birthdays together in the beginning of June, this was her go to drink request. So Marc and I decided to recreate it in her honor as we celebrated this warm and sunny Easter weekend!
We garnished the classic Pimm’s cocktail with a little more mint and a lemon slice. Then we just sat and enjoyed our drinks on the back patio! Oh my goodness, it was so refreshing and dangerously delicious. I loved having this amazing British cocktail, which brought back a lot of memories of my great Aunt Jean. This classic Pimm's cocktail is so simple and refreshing! It's the perfect cold beverage to serve at any warm weather gathering.
- 2 slices cucumber
- 2 slices lemon plus an additional for garnish
- 3 whole mint leaves plus additional for garnish
- 1/4 cup Pimm's liqueur
- 1 can ginger ale
- Add the cucumber slices, lemon slices, and mint leaves into a tall, thin glass and use muddler to lightly crush all of it to release their flavors. Then add ice cubes to the glass and the Pimm's. Finally, fill the glass the rest of the way with ginger ale. Garnish the top with more mint leaves and an extra slice of lemon and serve immediately!
