This cheesy mashed cauliflower makes such a wonderful, creamy and flavorful side that is low carb and simple! It's so perfect to complement any meal.
Bring a pot of water to a boil and season it with two very generous pinches of salt. Add the cauliflower florets and boil them until completely tender and mashable, for about 30 minutes. Test them with a fork to make sure. Once they are done, drain them and return them to the pot. Use a potato masher to mash them thoroughly, then add in the remaining ingredients. Stir it all together thoroughly, transfer to a serving dish and serve immediately! Enjoy!!
