Simple, flavorful and amazing snacks are really the best for a late afternoon pick me up or after school nosh. These parmesan herb roasted cashews fit the bill perfectly with their wonderful, salty crunch!
Pre-heat the oven to 350 and line a sheet tray with a silicone mat. Combine the cashews, olive oil, parmesan, and dried herbs together in a bowl and stir it all together well to make sure the cashews are coated. Spread the coated cashews out in a single layer on the sheet tray and roast them for about 10 minutes. Serve them immediately for a yummy snack!
