Brown Butter Spiced Belgian Waffles

Ingredients
  • 1 stick butter
  • 1 1/2 cups all-purpose flour
  • 1/2 cup dark brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon all-spice
  • 1/2 teaspoon cinnamon
  • 1 1/2 cups milk
  • 4 whole eggs
  • powdered sugar for dusting on top
  • maple syrup for topping
  • chopped walnuts toasted, for topping
Instructions
  1. Prepare the batter the night before. First, brown the stick of butter. Heat it up in a small pot over medium-high heat. Let it melt and cook just until it becomes a lovely amber color. Take it off the heat and let it cool completely. Meanwhile, in a large mixing bowl combine the flour, brown sugar, baking powder, salt, allspice and cinnamon. Whisk it together thoroughly to make sure it is aerated and the brown sugar isn't lumpy. In a separate bowl, combine the milk, eggs and cooled brown butter and whisk them thoroughly together. Pour the wet ingredients into the mixing bowl of dry ingredients and whisk them together until it becomes a gorgeous batter. Cover the bowl and set it in the refrigerator until the morning.
  2. In the morning, pre-heat your waffle iron and get out the batter. Be sure to follow the instructions for your particular iron to get the best results. Scoop 1/4 of the batter into the iron to cover the bottom, then close the iron to cook the waffle for 4-5 minutes. When it is done, plate it and top it with powdered sugar, syrup and walnuts. Repeat the process with the remaining batter and enjoy a wonderful brunch!
