You would never know there is a veggie hidden in these amazing fudgy zucchini brownies! They taste so decadent and are really simple to make.

Ingredients
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 1/4 cups dark brown sugar
  • 1/2 cup canola oil
  • 1 teaspoon vanilla extract
  • 1 whole zucchini grated
Instructions
  1. Pre-heat the oven to 350 and spray an 8 x 8 baking dish well with cooking spray. Whisk the flour, cocoa powder, baking soda, cinnamon and salt together in a bowl. In another large mixing bowl, stir the sugar, oil and vanilla together thoroughly. Slowly stir the dry ingredients into the wet ingredients until you have a crumbly, almost dry mixture. This is normal. Then stir in the zucchini until the batter starts to soften and become thick. Transfer the batter to the baking dish and make sure it is in an even layer. Bake the tray for about 30 minutes, until the edges just start to crisp and the center is baked through. Let them cool completely for an hour, then cut and serve! Enjoy!!
