In the slow cooker, combine the apple cider, bourbon, maple syrup, apple sauce, chipotles, brown sugar, Dijon, Worcestershire sauce, garlic, salt, paprika, chili powder, and red adobo seasoning. Stir all of that together. Add in the pork shoulder and coat it in the liquid. Close the slow cooker and turn it to low. Let the pork cook until super tender for 7 hours.
