Ingredients
  • 1/3 cup coconut oil melted
  • 1/3 cup honey
  • 2 whole eggs
  • 1 cup almond butter
  • 1/3 cup unsweetened cocoa powder
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/3 cup chocolate chips
  • 1/3 cup chopped walnuts (optional)
Instructions
  1. Pre-heat the oven to 350. In a large bowl, mix together the coconut and honey with a hand mixer or you can use a stand mixer. Add the eggs in next and beat them in. Then add the almond butter, cocoa powder, vanilla, salt and baking soda. Switch to a rubber spatula and fold in the chocolate chips and walnuts if using.
  2. Prepare an 8 x 8 baking dish by greasing it well. Pour the batter in and smooth it out to be even. Bake the brownies for 20-25 minutes, until a toothpick inserted in the center comes out cleanly.
  3. Take the the brownies out and let them cool completely, then just cut into the desired sized squares and serve!
