Strawberry Pie

Strawberry season makes me one happy woman. It’s my favorite fruit and my husband’s too! I end up going a little nuts while strawberry picking so I’m always looking for delicious ways to use them up. I decided to go back to basics and put those juicy little jewels in an amazing strawberry pie! I wanted it to just be a simple, rustic pie with nothing to take away from the star.

The dough was a basic pie dough that I jazzed up with a little cinnamon. I made sure that everything was cold so that when it hit the oven it would become super flaky. Once I made it, it needed to rest and chill as well for about 30 minutes.

When the dough was ready, I rolled out half of it into a large round that was a bit larger than my pie dish. The trick to minimize handling it was to roll the rough around my rolling pin, then unroll it over the pie plate. Then it was easy to quickly press it into the plate with a little bit of overhang. Then I just piled the filling ingredients in!

The other half of the pie dough went over the filling. Then I pinched the overhang from the bottom together with the top. Pressing the edge with a fork helped seal it and make it pretty. The finishing touch was to brush it with milk and sprinkle it with sugar on top. That was a trick I picked up from Nancy Fuller when I watched her make pie on her show. It just makes the crust dreamy.

This strawberry pie is so perfect for a summer gathering! The crust is buttery and flakey with the most amazing, flavorful filling.

Ingredients
FOR THE CRUST DOUGH
  • 2 cups all-purpose flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 sticks butter cold and cubed
  • 1/2 cup ice cold water
FOR THE FILLING
  • 2 pounds fresh strawberries hulled and sliced
  • 3/4 cup dark brown sugar
  • 1/2 tablespoon strawberry balsamic vinegar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • 2 tablespoons butter cubed
  • 1/2 teaspoon milk
  • 1 pinch granulated sugar
Instructions
  1. First, prepare the dough. Whisk the flour, cinnamon and salt together in a large mixing bowl to aerate them. Then use a pastry cutter to cut the butter into the ingredients until it is all pebbly. Lastly, pour the ice cold water in and stir it all together just until a dough forms. Do not overwork it. Bring the dough together into a ball, then cut it in half. Press each half out into a disc on a well floured surface, then wrap each half in plastic wrap. Let the dough discs rest in the refrigerator for 30 minutes.
  2. When the dough is done resting, pre-heat the oven to 425 degrees. Take the first disc of dough and roll it out to be a thin crust about 10 inches in diameter. Roll it around the rolling pin, then roll it back out into a 9 inch pie plate. Press it firmly into the pie plate and don't trim any excess edges. Add the strawberries, brown sugar, strawberry balsamic vinegar, cinnamon, salt, vanilla, and flour into the pie plate and gently stir it together a little. Dot the top with the butter.
  3. Roll out the second disc the same as the first one and lay it on top of the filling. Crimp the edges of the bottom crust and top crust together, then make the edge pretty by pressing it with the tines of a fork. Brush the top crust with the milk, then sprinkle it with the sugar to caramelize it. Cut a few vents in the center of the top crust so that it doesn't explode. Place the pie dish on a lined sheet tray to catch anything that bubbles over and bake the pie for 20 minutes. Then reduce the heat to 375 and bake it for another 50-60 minutes, until the top is completely golden brown and the filling is set.
  4. Take the pie out and let it cool for an hour and a half at least. Then slice it and serve with ice cream for an amazing summer treat!

  2. Yum! This looks so yummy! I love baking pies from scratch and even though it takes a little bit longer the crust and flavor is always so much better. I’ve never made a strawberry pie but I might need to try!

  3. My mom made me strawberry shortcake for my childhood birthdays. As an adult, she’d always have her neighbor friend make me a strawberry pie. It was delicious. Now that she’s passed away, I have been missing out. This recipe will make my next birthday so delicious!
