Slow Cooker Chicken and Dumplings

One of my guiltiest pleasures in the world is the chicken and dumplings platter at Cracker Barrel. Any time Marc and I go on a road trip, especially long ones down south to my sister’s, we always stop for lunch or dinner. It’s perfect because they are everywhere. Let me tell you, I live for those chicken and dumplings. Since we aren’t going on a road trip any time soon, and I was craving them, I decided to try making my own! I took a few short cuts and made mine in the slow cooker. That way I could go about my day while dinner cooked.

I really don’t know what I would do without my slow cooker now to be honest. I just stirred all of the ingredients except the “dumplings” (more on those in a minute) in it and turned the heat to low. It did all of the rest of the work.
So these canned biscuits were my lazy “dumplings”. I used the Southern Style Pillsbury biscuits and just quartered all of them to be the perfect size. It was important for me to keep this recipe incredibly simple so they ended up being perfect. I do want to try making real dumplings at some point, please don’t hate me for this! Also, I still jump a little every time I pop those cans open.
I just dropped those lazy dumplings right into the rest of the mixture after I shredded the chicken. That chicken was already so tender and it was falling apart without too much help. Then the slow cooker chicken and dumplings gently simmered for another couple of hours. The liquid got all absorbed into the biscuits and it became this gorgeous, thick dish.

Oh my goodness, when I tried it my soul was happy. This slow cooker chicken and dumplings was a bowl of pure comfort and so perfect with simple roasted veggies on the side. I felt like I was back having a road trip with Marc and stopping at Cracker Barrel right at home too, which was so fun. Hope you all enjoy it too! xoxo

It does not get much more simple or comforting than this incredible slow cooker chicken and dumplings! The dumplings are even a big shortcut by using pre-made biscuit dough.

Ingredients
  • 2 cups chicken stock
  • 2 cans cream of chicken condensed soup 10.5 ounce size
  • 1/3 cup heavy cream
  • 8 whole chives finely chopped, plus additional for garnish
  • 2 cloves garlic minced
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon dried onion
  • 1/4 teaspoon Worchestershire sauce
  • 1 pinch salt
  • 2 pounds boneless skinless chicken tenders
  • 2 cans Pillsbury Southern style biscuits
Instructions
  1. Get out a large slow cooker and combine everything but the biscuits in its bowl. Give it a good stir. Then turn the heat to low and let it all gently cook for 5 hours. When the 5 hours are up, use two forks to break up and shred the chicken a little. Then take the raw biscuits and quickly quarter all of them to make the shortcut dumplings. Stir them into the slow cooker with everything else and let the mixture cook for another 2 hours, stirring it every so often. A lot of the liquid will absorb into the biscuits and puff them up to make a thick, gorgeous mixture. Serve it immediately with your favorite veggie sides! Makes great leftovers too.
