Red Wine Fig Brownies

Marc and I recently hosted a really fun dinner and game night with two other couples. I was in charge of the food while they brought wine and games. We had such a blast, especially playing Hollywood Game Night. I have a strict rule that I never serve a dinner that I’ve never made before to company, so I made my tried and true eggplant parmigiana and Mediterranean couscous salad. When I planned the menu though, I allowed myself a little more freedom with dessert. I wanted it to be sophisticated but still fun. So I devised the most decadent, wonderful red wine fig brownies. They were simple to make too!

The batter for the red wine fig brownies was so fun to make. After I melted chocolate, butter, milk and fig jam together, my beloved stand mixer did all of the work for me. It was ridiculously thick and luscious when I finished making it.
I decided to use an 8 x 8 baking dish for this recipe so that the brownies would be really thick. They puffed up so gorgeously to become nice and tall.
It took 45 minutes for the red wine fig brownies to bake perfectly through. They became slightly crisp on top and gloriously gooey in the center. After they cooled completely, I cut them into 16 equal squares. Then I just sealed them up until it was time for dessert at the party!

Let me tell you, these babies went down a treat. The red wine enhanced the chocolate so gorgeously and paired well with the fig. It’s a bit of a family tradition in my house to always have chocolate of some kind after a big Italian dinner and I wasn’t about to stray from tradition this time. It was so great to share these red wine fig brownies with our friends and they really raved about them. I love cooking and baking for people so much!! Hope you all love this wonderful dessert too. xoxo

Ingredients
  • cooking spray for the baking dish
  • 1 cup all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 pinch salt
  • 8 ounces semi-sweet baking chocolate roughly chopped
  • 3/4 cup fig jam
  • 6 tablespoons butter thinly sliced
  • 1 tablespoon milk
  • 1 cup granulated sugar
  • 4 whole eggs
  • 1 cup red wine
Instructions
  1. Pre-heat the oven to 350 and spray an 8 x 8 baking dish really well with unflavored cooking spray. Whisk the flour, cocoa powder and salt together in a bowl and set it aside. Then fill a small pot about halfway with water and bring it to a gentle simmer over medium heat. Combine the chocolate, fig jam, butter and milk in a heat proof bowl and place it over the simmering water to form a double boiler. Let it all melt together completely and become shiny, stirring it often with a heatproof spatula or spoon. Take it off the heat when it all smooth and melted and let it cool for a few minutes.
  2. Set up a stand mixer with the paddle attachment and beat the sugar and eggs thoroughly together in its bowl. Pour in the melted chocolate and fig jam mixture next and let it get mixed in completely. Then pour in the red wine. Finally, turn the speed to low and slowly add in the dry ingredients until you have a thick, luscious batter. Pour the batter into the prepared pan and bake for about 45 minutes, until completely baked through. Use a toothpick inserted in the center to test it. Let them cool completely, then cut into 16 equal brownies. Serve immediately or store in an airtight container until you need them! They'll keep for a few days.
