Savory Italian Palmiers

Palmiers look and sound so fancy. I absolutely love them as either an appetizer or dessert! The first time I made them was in culinary school when we learned how to make homemade puff pastry and I was hooked. Their shape is so fun and they are also so versatile. The filling possibilities are endless! Making puff pastry is really rewarding but it is also insanely time consuming. Thank goodness for the frozen stuff, which is what I used in these savory Italian palmiers!

I prepped the filling for the savory Italian palmiers first. It was such a fantastic mixture of my favorite Italian ingredients. There was salty prosciutto, gorgeous sun-dried tomatoes and creamy goat cheese to hit all of the different parts of the palette.
Then I rolled my first puff pastry sheet out to be just slightly thinner and bigger. I wanted it to measure about 9 inches by 11 inches for the perfect sized savory Italian palmiers. Then I sprinkled half of the filling ingredients evenly across the sheet.
Folding the savory Italian palmiers was simple from there. I folded the short ends in halfway toward the center. Then I did that again so that the two folded ends met in the center. It looked like an open book! I closed the book by bringing one side over and pressing them together firmly. Then I repeated that process with my other puff pastry sheet and filling ingredients. Both rolls needed to chill before I sliced and baked them. That way the puff pastry would firm up again.
When I baked the savory Italian palmiers they became so gloriously golden and melty. The goat cheese acted as the glue for the rest of the ingredients. I just let them cool for a couple of minutes and served them hot!

Oh my goodness, I was so happy when I bit in. The crispy, buttery puff pastry was the perfect vehicle for those wonderful filling ingredients. These savory Italian palmiers are such fantastic and simple party bites! They are filled with salty prosciutto, sun-dried tomatoes and luscious goat cheese.

Ingredients
  • 2 sheets frozen puff pastry thawed
  • 8 ounces goat cheese crumbled
  • 1/4 pound thinly sliced prosciutto finely chopped, divided
  • 1 jar sun-dried tomatoes 10 oz size, drained and finely chopped, divided
  • 2 pinches garlic powder
  • 2 pinches Lawry's seasoned salt
Instructions
  1. Lay the first sheet of puff pastry out on a clean surface and roll it out a little to be roughly 9 x 11. Evenly distribute half of the goat cheese, half of the prosciutto and half of the sun-dried tomato across the sheet. Season it with a pinch of the garlic powder and seasoned salt. Working with the short ends, fold them in halfway toward the center. Fold them halfway again so that they meet in the center. Bring one side over onto the other side and press them together. Repeat the process with the other sheet of dough and the other halves of the ingredients.
  2. Chill the two rolls for an hour in the refrigerator to firm the puff pastry back up again. Then when it almost done chilling pre-heat the oven to 400 and line two sheet trays with silicone mats. Take the rolls out and slice them into roughly 1/2 inch slices that look like cute little elephant ears. Be sure to use a really sharp knife that can easily cut cleanly through the roll. Lay them out on the sheet trays and bake them for about 20 minutes. The puff pastry should become crisp and golden. Let them cool for a minute and serve warm immediately!
