Cucumber Tea Sandwiches

I love how elegant and fun it is to have an afternoon tea. I’ve been to two in my life. The first was in Ireland when I was traveling Europe with my best friend during college break. I fell completely in love with the ritual. We sat for 2 hours just enjoying tea, light sandwiches and pastries. It was the perfect little meal to tide us over between lunch and dinner since all of the walking we did worked up our appetite. The second was right in Disney World at Grand Floridian. It was so relaxing after several days of running around the parks. So with Mother’s Day this weekend, I was inspired to create my own little cucumber tea sandwiches for a Mother’s Day tea! They were so simple and yummy.

I wanted the cucumber tea sandwiches to have loads of flavor obviously. So I decided to make my own simple lemon dill mayo. I also tossed my cucumber slices with a little salt, pepper and even more dill. That meant there would be layer upon layer of flavor going on!
Next, I prepared my bread. I trimmed away the crusts so that they were pretty, uniform rectangles. It makes the sandwiches more elegant! I kept the crusts to make croutons since there was no need to waste them.
Assembling the cucumber tea sandwiches was a cinch. I slathered my lovely homemade mayo on every slice of the bread. Then I piled my dressed cucumbers on half of the slices before I closed them with the other three slices. Finally, I cut them in half to make them the perfect size for a tea sandwich.

Oh my goodness, I was transported immediately to a yummy, traditional afternoon tea right in my own home. It was so relaxing to sit for 15 minutes and enjoy the cucumber tea sandwiches with a cup of tea and quick batch of my lemon blueberry scones. I hope you enjoy them too! xoxo

These cucumber tea sandwiches are so little and elegant for a light lunch or afternoon tea! The homemade lemon dill mayo just makes them.

Ingredients
FOR THE HOMEMADE MAYO
  • 1 whole lemon zested and juiced
  • 1 whole egg yolk
  • 2 teaspoons Dijon mustard
  • 1 tablespoon fresh dill roughly chopped
  • 1 pinch salt
  • 1 pinch freshly cracked black pepper
  • 1 cup canola oil
FOR ASSEMBLING THE SANDWICHES
  • 6 slices sandwich bread
  • 1 whole cucumber thinly sliced
  • 1 tablespoon fresh dill
  • 1 pinch salt
  • 1 pinch freshly cracked black pepper
Instructions
  1. First, make the mayo. Wrap a medium mixing bowl in a cold wet towel, which helps emulsify the mayo. Then combine the lemon zest, lemon juice, egg yolk, Dijon, dill, salt and pepper in the bowl. Whisk it all together well. Keep whisking while you slowly pour in the canola oil until you have a gorgeous pale yellow mayo. Set it aside. Take the bread and remove the crusts to have little trimmed rectangles. Take the cucumber slices and blot them well with paper towels so they aren't soggy. Then toss them with the dill, salt and pepper in another bowl.
  2. Slather a generous layer of mayo onto each slice of bread. Then pile a small, even amount of dressed cucumbers onto 3 of the slices. There might be leftover mayo and cucumber slices to have later! Close the sandwiches by placing the other 3 slices on top with the mayo side down. Cut each of the 3 sandwiches in half horizontally to have 6 cute little tea sandwiches. Serve them immediately with some yummy scones and a great pot of tea!
