Coconut Pineapple Granola

I use granola a whole lot in this house. It’s amazing in yogurt, pancakes, oatmeal, or even just on its own as a snack. My maple pecan granola from last year was so fun and I loved making it. With warm weather coming, I started to think tropical thoughts. So I decided to bring the tropics home with this amazing, healthy coconut pineapple granola variation! It was an absolute cinch to make and so much better than store bought granola.

The coconut pineapple granola was chock full of goodies. I used lots of oats, coconut, chopped pecans, pineapple juice, agave syrup, and spices. All I did was mix all of that together!
I made sure to grease my lined baking sheet with coconut oil so that the coconut pineapple granola wouldn’t stick. Then I spread that gorgeous mixture out onto the sheet tray in a thin layer.
The coconut pineapple granola baked for 30 minutes to crisp up and cook through. It made the whole house smell like a tropical beach with the almond and coconut scent wafting everywhere. The next step was the key though. I stirred it all well and put it back in the oven to dry out for 2 hours. That made it really crisp and glorious!

I was so happy when I tried one or five handfuls of this stuff. It was crunchy and huge on flavor. Then I proceeded to put more of it in my vanilla yogurt for lunch. Since I can’t get to a tropical beach anytime soon (sigh), this stuff at least made the day a little sunnier. Hope you all love it as much as we did in this house! xoxo

Homemade granola is a cinch! This coconut pineapple granola is an amazing, tropical inspired snack that goes perfectly in yogurt, pancakes, you name it.

Ingredients
  • 1 tablespoon coconut oil
  • 3 cups old fashioned oats
  • 2 cups shredded coconut
  • 2 cups almonds roughly chopped
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon coconut extract
  • 3/4 cup pineapple juice
  • 3/4 cup agave syrup
Instructions
  1. Pre-heat the oven to 400 and line a sheet tray with a silicone mat. Grease the mat with the coconut oil to really make sure the granola doesn't stick. Then combine all of the remaining ingredients in a large mixing bowl. Stir it together thoroughly, then spread it out in a thin layer on the prepared baking sheet. Bake the granola for 30 minutes, then turn off the oven. Break up the granola and give it a good stir. Put it back into the oven to dry out completely for two hours. Then pack it into airtight containers where it will keep for a month!

  2. I actually make my own granola (actually made some and boxed in cute boxes as a wedding favor) and will definitely try this out. I wondered though, is there a reason you use agave syrup instead of honey? BTW, found your blog from the Bloggers Supporting Bloggers FB group and your recipes seem quite interesting.     1. Hi there! The honest main two reasons were that I had just received a big bottle of it from my friend and wanted to use it, as well as the fact that it is vegan for my vegan readers.   3. The recipe sounds wonderful and I can’t wait to try it! Could you add dried pineapple before placing it in the oven or would it be best to add it after the baked granola cools? I would hate for it to burn in the oven. Thanks!
