I loved these apple peach braised pork chops this time of year. The peaches were still gorgeous and juicy at my market but apples are also starting to go into their peak. The nights are starting to get cooler now too so I was inspired to do some comforting braising. This dish could not have been more simple and incredible!
I broke out my trusty dutch oven and seared my pork chops in it to get a gorgeous caramelization on them. Then I removed them to get the braising mixture going. I softened my produce in the pot and let them develop flavor. Then a hard apple cider, Worcestershire sauce, chicken stock, salt and smoked paprika went in.
After the braising was done, I removed the pork chops and tented them with foil to keep them warm. I brought the glorious fruit filled liquid to a boil again and let it reduce down for about 20 minutes. I wanted it to get thick and really concentrated in flavor. I stirred in a little butter because that is always the right thing to do when finishing a sauce.
Once the sauce was reduced, that was all there was to it! I plated the apple peach braised pork chops and smothered them in the sauce. With some roasted potatoes and greens it was such a fantastic meal. It bridged the transition from Summer into Fall for me and I absolutely loved it. Enjoy, friends!
