Parmesan Herb Roasted Cashews

Cashews are my absolute favorite type of nut to snack on. They’re completely addicting and I love noshing on them with Marc on the few occasions when we actually get to flop on the couch to watch TV together. This week I really wanted to jazz them up with some of my favorite, Italian inspired flavors. So I made these incredible parmesan herb roasted cashews! They came together in 15 minutes with very little effort.

I wanted to make sure the cashews were really well coated with all of those gorgeous flavors. So I just mixed everything together thoroughly in my bowl. There was lots of olive oil, grated parmesan and 3 kinds of dried herbs!
After I spread them out on my lined sheet tray, the parmesan herb roasted cashews just melded together for 10 minutes. It not only brought out the flavors of the coating, it also really brought out all of the gorgeous flavor of the cashews.

That was all there was to this amazing snack! I loved having them warm but they also kept well sealed up for leftovers. Not that they’ll last that long! Hope you all love them too, let me know what you think in the comments. xoxo

Simple, flavorful and amazing snacks are really the best for a late afternoon pick me up or after school nosh. These parmesan herb roasted cashews fit the bill perfectly with their wonderful, salty crunch!

Ingredients
  • 1 cup whole cashews
  • 2 tablespoons olive oil
  • 1 tablespoon grated parmesan cheese
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried tarragon
Instructions
  1. Pre-heat the oven to 350 and line a sheet tray with a silicone mat. Combine the cashews, olive oil, parmesan, and dried herbs together in a bowl and stir it all together well to make sure the cashews are coated. Spread the coated cashews out in a single layer on the sheet tray and roast them for about 10 minutes. Serve them immediately for a yummy snack!
