Parisian Hot Chocolate

I fell in love with Paris back in college over 15 years ago. Typing that really makes me feel old! Everything from the food to the lights and architecture just enchanted me beyond measure. I haven’t been able to go back since, but Marc and I are hoping to take a trip together there in the near future. It will be so exciting to go with the man I love to the most romantic city in the world. While we wait to go, I decided to bring a little Paris into our kitchen this week. Parisian hot chocolate was one of my favorite things that I drank there and I missed it. So when David Lebovitz recently posted his recipe for the classic on his Facebook page, I was inspired to try it out. I am so glad I did!

His recipe for Parisian hot chocolate was so simple but so decadent. I used dark chocolate that was 80% cacao for really deep flavor. Any chocolate that is 70% cacao or higher works very well in this drink though. I also made sure to chop it pretty finely so that it would whisk into the milk easily.
Whole milk was the perfect richness for this Parisian hot chocolate. Anything less fatty and it would not be rich enough. Anything more fatty and it would taste too fatty. I just whisked my chopped chocolate into the boiling whole milk until it was smooth. Then I added in a little brown sugar and cinnamon to give it even more depth of flavor. That was all there was to it!

I just poured the cocoa into pretty little mugs for Marc and I to enjoy right away. If it does sit and cool too much, it thickens to the point of being like pudding. That’s not necessarily a bad thing, but rewarming it in the pot will bring it back to a more liquid texture. We felt like we were in Paris already when we drank our Parisian hot chocolate and can’t wait to get there in person. I hope you all love this little taste of the City of Lights too! xoxo

Ingredients
  • 2 cups whole milk
  • 5 ounces chocolate finely chopped. At least 70% cacao
  • 1 tablespoon brown sugar
  • 1/4 teaspoon cinnamon
Instructions
  1. Heat the milk in a small saucepan over medium to medium high heat until it starts to very gently boil. Whisk in the chocolate until it is smooth. Continue to whisk and cook the hot chocolate for about 2-3 minutes until it really comes together and thickens. Take the pot off of the heat and whisk in the brown sugar and cinnamon until it dissolves. Pour it into 4 small mugs and enjoy immediately!
