Flourless Bailey’s Chocolate Mug Cake

I discovered the joys of mug cakes in college when all I had was a small fridge/freezer/microwave combo in my dorm room for making food. Ah, the days of ramen. We weren’t even allowed a hot plate. The need to bake was strong though, so I figured out how to make easy cakes in my microwave. This flourless Bailey’s chocolate mug cake harkens back to those days, and I loved how simple it was. They are also so great to make perfect little individual portions and require few ingredients!

The base for this cake was only dark chips and vegetable oil that I microwaved for just 45 seconds. Once I stirred them together until smooth, I added in the rest of the ingredients. It was only cocoa powder, super fine sugar, Bailey’s, and an egg. I told you it was simple!

After another minute in the microwave, dessert was ready. It was literally ready in less than 15 minutes, which l loved because my sweet tooth was hankering for it. Just to give it a little extra interest and flavor, I sprinkled a little powdered sugar on top. I ended up transferring it to a smaller mug simply for picture purposes but this is a one mug operation normally, which is great for cleanup. Hope you all love it too! xoxo

Ingredients
  • 1/4 cup dark chocolate chips
  • 1 tablespoon vegetable oil
  • 1 tablespoon cocoa powder
  • 1 tablespoon Bailey’s Irish Cream
  • 1 teaspoon super fine sugar
  • 1 whole egg
Instructions
  1. Combine the chocolate chips and vegetable oil in a microwave safe mug and microwave them on high for about 45 seconds to melt them together. Stir them both together until you have a smooth base. Stir in the remaining ingredients, then microwave it all for another minute. The edges should get slightly crisp while still being soft in the middle. Let it sit and cool for 5 minutes, then enjoy warm with an extra sprinkle of powdered sugar on top!
