Earl Grey Shortbread Cookies

I mainline coffee to wake up in the morning, but in the afternoon if I am dragging (which usually happens like clockwork at 3:30), I love to have a cup of tea. My beloved great aunt Jean, whom I have talked about a lot on this blog, was responsible for making me love having afternoon tea. When I enjoyed tea with her there were almost always shortbread cookies (she called them biscuits) involved too. So I decided to whip up a batch of absolutely gorgeous and buttery earl grey shortbread cookies to enjoy with my tea! The dough was really simple and let the earl grey tea leaves shine.

In my stand mixer I just whipped the butter, super fine sugar, a pinch of salt, the loose leaves from two bags of earl grey and flour together. Then I turned it out onto a big sheet of plastic wrap and formed it into a long rectangle. It needed to chill in the plastic wrap for an hour so that the butter would set again. The butter needed to be cold when it hit the oven so that the cookies would be really tender and almost flaky.
After the hour, I sliced the rectangle into roughly 1/2 inch thick cookies and laid them out on my lined sheet tray. Then I poked them all twice with a fork to give them the signature shortbread marks. They were looking fantastic already!

They needed to bake for 20 minutes to just develop some color around the edges and bake through. That was all there was to these babies! I enjoyed them with my afternoon cup of tea and oh man was it heaven. The earl grey flavor was gorgeous with all of that buttery, sugary goodness. Hope you all love them too! xoxo

These earl grey shortbread cookies are so buttery, simple and gorgeous! They’re just made for enjoying at afternoon tea or for dessert.

Ingredients
  • 2 sticks unsalted butter softened to room temperature
  • 1/2 cup super fine sugar
  • 1 pinch salt
  • 2 bags earl grey tea cut open
  • 2 cups all-purpose flour
Instructions
  1. Set up a stand mixer with the paddle attachment and combine the butter and sugar in its bowl. Beat them together until fluffy. Add in the salt and the loose leaves from the two tea bags and let them get mixed in. Finally, slowly add in the flour until you have a soft dough. Turn the dough out onto a big sheet of plastic wrap and form it into a long rectangle about 2 inches in height. Wrap it up and set it in the refrigerator to chill for an hour. This will make the dough easier to slice and the butter cold when it hits the oven. 

  2. When the hour is up, pre-heat the oven to 350 and line a sheet tray with a silicone mat or parchment. Take the dough and slice the rectangle into 1/2 inch cookes. You should get roughly 18-20 out of the rectangle. Line them up with a little room in between them on the sheet tray and bake them for 20 minutes. Let them cool, then serve with your favorite tea!

    Made these last night! We had a guest come over so they were the perfect offering! Super easy to make with a nice buttery taste. I added a drizzle of lemon glaze and topped with a sprinkling of lavender sugar.
