I use granola a whole lot in this house. It’s amazing in yogurt, pancakes, oatmeal, or even just on its own as a snack. My maple pecan granola from last year was so fun and I loved making it. With warm weather coming, I started to think tropical thoughts. So I decided to bring the tropics home with this amazing, healthy coconut pineapple granola variation! It was an absolute cinch to make and so much better than store bought granola.
I was so happy when I tried one or five handfuls of this stuff. It was crunchy and huge on flavor. Then I proceeded to put more of it in my vanilla yogurt for lunch. Since I can’t get to a tropical beach anytime soon (sigh), this stuff at least made the day a little sunnier. Hope you all love it as much as we did in this house! xoxo
Homemade granola is a cinch! This coconut pineapple granola is an amazing, tropical inspired snack that goes perfectly in yogurt, pancakes, you name it.
- 1 tablespoon coconut oil
- 3 cups old fashioned oats
- 2 cups shredded coconut
- 2 cups almonds roughly chopped
- 1 teaspoon cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon coconut extract
- 3/4 cup pineapple juice
- 3/4 cup agave syrup
- Pre-heat the oven to 400 and line a sheet tray with a silicone mat. Grease the mat with the coconut oil to really make sure the granola doesn't stick. Then combine all of the remaining ingredients in a large mixing bowl. Stir it together thoroughly, then spread it out in a thin layer on the prepared baking sheet. Bake the granola for 30 minutes, then turn off the oven. Break up the granola and give it a good stir. Put it back into the oven to dry out completely for two hours. Then pack it into airtight containers where it will keep for a month!
